糖化酶Gluco-Amylase 是以黑曲霉变异菌株经发酵制得的高效生物催化剂。糖化酶能在常温条件下将淀粉分子的a-1.4和a-1.6糖苷键切开,而使淀粉转化为葡萄糖。
 	酶活力定义: 1克酶粉或1ml酶液于40℃PH4.6条件下,1小时分解可溶性淀粉产生1mg葡萄糖的酶量为1个酶活单位。
